Banana Pancakes

Ingredients:

  • 2 eggs

  • 1 ripe banana

  • Handful of blueberries (optional as a topping)

  • Handful of raspberries (optional as a topping)

  • Handful of blackberries (optional as a topping)

  • Dollop of 1.5% fat plain Greek yogurt (optional as a topping)

  • 1 tbsp of your preferred nut butter (optional as a topping)

  • 3 tbsp of your preferred jam (optional as a topping)

Instructions:

  1. Mash up 1 banana with the back of a fork in a bowl.

  2. Crack the 2 eggs into the bowl with the mashed banana.

  3. Mix and combine the eggs and the banana very well.

  4. Turn heat for the pan to medium-low.

  5. Grease your pan.

  6. Pour the amount of batter you want on the pan to size each pancake.

  7. Cook each pancake for 1-2 minutes on each side, or until no longer raw.

  8. Plate the pancakes, then add your desired toppings.

  9. Enjoy.

Tip: Add berries, yogurt, jam, and peanut butter as a topping.
