1 ripe banana
Handful of blueberries (optional as a topping)
Handful of raspberries (optional as a topping)
Handful of blackberries (optional as a topping)
Dollop of 1.5% fat plain Greek yogurt (optional as a topping)
1 tbsp of your preferred nut butter (optional as a topping)
3 tbsp of your preferred jam (optional as a topping)
Mash up 1 banana with the back of a fork in a bowl.
Crack the 2 eggs into the bowl with the mashed banana.
Mix and combine the eggs and the banana very well.
Turn heat for the pan to medium-low.
Grease your pan.
Pour the amount of batter you want on the pan to size each pancake.
Cook each pancake for 1-2 minutes on each side, or until no longer raw.
Plate the pancakes, then add your desired toppings.
Tip: Add berries, yogurt, jam, and peanut butter as a topping.
