1 and 3/4 cups of oat flour (spooned, not packed)
4 oz softened butter
1 1/2 cup packed of pitted dates
1/2 cup hot water
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp sea salt flakes
1 cup chopped sunspire 99% cacao chocolate
Preheat your oven to 350 degrees Fahrenheit.
Blend your pitted dates with 3/4 cup of hot water until a smooth paste, then set aside.
Cream together butter and date mixture, until fluffy and appears whipped.
After the mixture is fluffy, beat one egg in a separate bowl and then add it to the mixture and beat the mixture until fully combined and smooth.
In another separate large bowl, mix together flour, cinnamon, salt, and baking soda. Properly combine. (Sift dry ingredients for a smoother cookie dough).
Add the dry ingredients to the wet ingredients in small increments, beating each time, until all dry ingredients are incorporated into wet ingredients and mixture is combined fully.
Chop up chocolate into chunks and when all chocolate is chopped, fold it into the cookie dough and make sure it is evenly distributed.
Drop one spoonful onto an ungreased baking pan/sheet until all cookie dough is used up (about 24 cookies).
Bake for 15 minutes. (If made less cookies that are larger, bake for 20mins)
OPTIONAL: If you’re a fan of salty and sweet, sprinkle just a few sea salt flakes on top of each cookie. You won’t regret it, we promise. Also, you can put extra cacao on top of the cookies if you’d like before you bake.
NOTE: Cookie dough may appear weird and fluffy, BUT THIS IS EXACTLY WHAT YOU WANT. This ensures a fluffy yet dense, delicious cookie. These cookies have the texture of a very fluffy, rich cake.
