Paleo Chocolate Chunk Brownies


  •      1 1/3 cups oat flour

  • 3/4 tsp baking soda

  • 3/4 cup unsalted butter

  • 1 1/2 chopped, packed dates (20-30 depending on size)

  • 1 cup cacao powder (if not using cacao, cocoa will work)

  • 1 tsp salt

  • 1 Tbsp vanilla extract

  • 3 large eggs

  • 1 cup (or more) chopped sunspire unsweetened 99% chocolate baking bar (use normal chocolate if desired)


  1. Preheat the oven to 350 degrees Fahrenheit, and grease an 8×8in pan with your desired oil.

  2. In a food processor or blender, blend dates with 1/2 cup hot water until blended into a smooth, brown paste, then set aside.

  3. Melt the butter.

  4. Once melted, add the date paste into it and cook for another minute.

  5. Add the cacao and salt to the melted butter and date mixture. Stir to combine.

  6. Add the vanilla to this mixture, and then the eggs one at a time. Whisk fully so that the mixture is smooth and glossy.

  7. Add the salt, flour, and baking soda into the mixture, and mix until combined.

  8. If stirring in the chocolate chunks, refrigerate mixture for 15 minutes before mixing them in.

  9. Pour and spread the mixture into your pan.

  10. Cook for 30 minutes.

  11. Let cool for 20 minutes.

  12. Enjoy.
