Paleo Blueberry Peanut Butter Donuts
*YOU NEED A MINI OR REGULAR SIZED DONUT PAN*
1/2 cup of blueberries
1 tsp salt
1 tsp apple cider vinegar
1 cup of oat flour (spooned into cup)
1/4 tsp of pure vanilla extract
1/3 cup of chopped and pitted dates (packed into the cup)
3.5 tbsp of coconut oil or butter
1 tsp baking powder
1/4 cup preferred milk
Preheat your oven to 350 degrees Fahrenheit.
Put dates into a blender or food processor with a 1/4 cup of hot water, and blend on high until a thick paste.
Combine milk, apple cider vinegar, vanilla extract, date paste, and oil in a bowl and put aside.
In a separate bowl, stir all the remaining ingredients together, then pour the wet mixture you made in step 2 into this dry mixture and mix only until the batter has no remaining dry spots. DON’T OVER MIX THE BATTER!
Gently stir in the blueberries to this now wet batter.
Take out a mini or regular donut pan (one can be purchased at TJ MAXX or other big box stores), grease it with your desired oil, and put just enough batter in each slot so that is filled, but not spilling out.
Bake for 12 minutes, or until batter is no longer wet.
Let cool for 10 minutes in the pan.
Remove donuts from pan by hitting the back of the pan.
Drizzle warm peanut butter on top.
