Sweet Potato Pancakes
While you should still occasionally enjoy regular pancakes if you like, these are a delicious and healthier alternative to a traditional pancake made with white flour, butter, and sugar! Also, these pancakes are paleo, and have no added sweeteners or refined carbs. We always mention no refined carbs… but what does that really mean? Refined carbs are stripped of their fiber and nutrients, so they spike your blood sugar and digest much faster than unrefined carbs! Unrefined carbs typically contain lots of fiber and nutrients, thus keeping you fuller longer and providing your body with proper fuel and nourishment!
1/2 cup cooked sweet potato flesh
A smear of butter (or coconut oil or any grease)
1 tsp cinnamon
1.5% fat plain Greek yogurt
Cook a plain sweet potato (if not already cooked) in microwave or oven until is soft.
Scoop out 1/2 cup of flesh with no skin and put in bowl.
Mash the sweet potato until smooth.
Let sweet potato mash cool for 5 minutes
Add the eggs into the sweet potato and whisk until fully combined
Whisk in the cinnamon.
Over low heat, put your desired cooking grease into a small skillet or sauté pan and cook each pancake for approx 2 minutes on each side.
Tip: Top with yogurt, jam, chopped pecans, and peanut butter.
