Coconut Pecan Butter
This coconut pecan butter is delicious, easy, and full of health benefits! It’s made with just three simple ingredients!
1 cup shredded dried unsweetened coconut
12 fancy medjool dates (pitted)
3 tbsp coconut oil
1 tsp cinnamon
1 tsp vanilla extract
Toast the coconut and pecans at 300 degrees Fahrenheit for 20 minutes (toss them halfway through for 30 seconds and then put them back in the oven).
Let the nuts and coconut cool for 15 minutes.
Blend together everything except the dates.
Once this mix is blended, add in the dates.
Blend everything together for 5 minutes.
Notes: Store in the fridge. The butter is very thick and can be spread on toast, mixed into oatmeal, or even eaten alone!
