Paleo Banana Bread

Ingredients:

  • 1 cup of packed dates 

  • 2 large eggs, at room temperature.

  • 1 Tsp Vanilla Extract

  • 2 1/2 cups oat flour

  • 1 TSP baking soda

  • 1/2 TSP salt

  • About 5oz of any yogurt (we prefer using siggis banana cinnamon yogurt)

  • 3 very ripe (brown) bananas

  • 1 TSP Cinnamon

  • 4oz/1 stick/ 1/2 cup unsalted butter


Instructions:

  1. Preheat your oven to 350 degrees Fahrenheit.

  2. Grease a 9X5 loaf pan with your desired oil.

  3. Blend dates with 1/2 cup hot water to make them into a paste, then set aside.

  4. Melt butter. 

  5. In a large bowl mix together the butter and date paste. Then add eggs and vanilla and mix. 

  6. Once the eggs and vanilla are mixed, mix in the oat flour, baking soda, and salt.

  7. In a separate bowl, mash bananas. 

  8. Once mashed, fold the in bananas and yogurt into the flour mixture.

  9. Once all ingredients are combined, pour the mixture into your prepared pan.

  10. Bake 60 minutes. Of course, always check with a toothpick to make sure it is fully cooked. Or a knife if you want to reach the bottom.

  11. Let cool for 1 hour

  12. Enjoy.

NOTE: We recommend serving it with salted butter or natural peanut butter and a little bit of jam.
